Damon’s Nova Scotia Oatcakes

1 C Steel Cut Oats
1 C Rolled Oats (not quick cooking or instant). I prefer mine pulsed in food processor to make a grainier biscuit.
1/4 C flour
3/4 C Brown Sugar (packed)
1 1/2 tsp Kosher Salt
1/2 or 1/3 tsp Baking Soda…because sometimes baking isn’t science.
3/4 Cup Unsalted Butter, room temp
1/4 scalding water

Combine dry ingredients, cut in butter, add hot water to tacky dough. Dust with flour to handle and transfer to dusted large baking sheet. Dust with flour so as to Roll to 1/4″ thick in pan. Score. Bake 375 F for 10-12 min or until golden/light-brown (remove if you light chewy) or for crispy continue and reduce to 325 for additional 10 min.
